Mango Coconut Bars

These are a great pre-workout snack or mid-afternoon pick me up.  They are loaded with fiber, omega 3’s, and plant based protein!  Wahoo!


  • ¾ cup fresh or soaked dried dates
  • ½ cup shopped mango
  • ½ cup ground flaxseed
  • ½ cup soaked or cooked quinoa
  • ¼ cup macadamia nuts or walnuts
  • 2 Tbls chia seeds (optional)
  • 1 tsp cinnamon
  • 1 tsp lemon zest
  • salt to taste
  • ¼ cup shredded coconut


  • Line an 8×8 dish with parchment paper
  • In a food processor, process all ingredients together expect coconut
  • Remove mixture from processor and mix in coconut with hands
  • Press into lined dish—I use another piece of paper to press with
  • Place in freezer until hard
  • Remove from dish and cut into bars

I store them in the freezer because I like them to be hard.  They could be kept in the fridge as well but the consistency will just be a little gooier.  Either way, they are delicious and will give you a great boost!
