Cream of Celery Soup

We have been dealing with a celery overload for about the past week.  We finally got down to the last few stalks but they were looking a little limp–not exactly great for crunching on.  I didn’t want to toss them so I knew I had to act fast.  I found this recipe, made a few small adaptations and the celery was saved (PHEW!).   One of the adaptations was some cilantro as we also had some of that waiting to be loved.

This recipe is easy peasy–I think it took me about a minute to prep!  When it was blending in the processor, I threw together a yummy salad and I had dinner ready in less than 10 minutes.


  • 2 cups chopped celery
  • 1/2 cup raw cashews
  • 1 garlic clove
  • 1/4 cup cilantro
  • 1 1/2 cups water
  • 3/4 tsp salt
  • dash or two of cayenne pepper


  • Put everything in a food processor and process until smooth (several minutes)
  • Garnish with cilantro and sprinkle a little cayenne pepper on top
  • Told you it was easy.
